24화 에필로그 — 완벽한 궤도

오픈 키친 안의 풍경은 2년 전과 비슷하면서도 확연히 달라져 있었다.

소스 파트와 메인 스테이션을 완벽하게 장악한 서한결은 더 이상 불안해하거나 주위의 시선을 의식하는 신입이 아니었다. 그는 AURA 멜버른의 수 셰프였고, 헤드 셰프 다니엘 강과 가장 완벽한 호흡을 맞추는 사람이었다.

그 자리는 여섯 달 전 그룹 채용 공고로 열렸다.

조건은 네 줄이었다. 시라즈도 없었고 한국어도 없었다. 지원자는 아홉 명이었고, 심사는 시드니에서 클로이가 봤다.

그리고 한결이 붙었다.

발표가 난 날 저녁, 다니엘은 매장에 있었다. 심사장에는 가지 않았다.

도각, 도각—

한결이 안정적인 리듬으로 허브를 다지는 동안, 패스 스테이션에서 오더를 점검하던 다니엘의 시선이 자연스럽게 그쪽으로 향했다.

이제 주방 스태프들은 두 사람 사이의 기류를 놀라워하지 않았다. 오히려 완벽하게 정돈된 두 사람의 파트너십을 당연한 원칙처럼 받아들이고 있었다.

주방 반대편에서 코미 하나가 조심스럽게 손을 들었다.

"Chef. 이 소스, 산도가 좀 튀는 것 같은데요."

한결이 고개를 들었다. 두 달 전에 들어온 워홀러였다. 영어가 서툴러서 첫 주엔 오더도 제대로 못 받던 아이였다.

"어디가 튀어."

"끝 맛이요. 안심이랑 붙으면 셀 것 같습니다."

"맛봐도 돼?"

한결이 걸어가 스푼을 들었다. 그리고 몇 초 뒤에 고개를 끄덕였다.

"맞네. 버터 한 조각 더 넣고 몽떼 다시 잡아."

"네, Chef."

"그리고."

한결이 스푼을 내려놓았다.

"잘 잡았어. 다음에도 그렇게 말해."

패스 쪽에서 다니엘이 그 광경을 보고 있었다.

그는 아무 말도 하지 않았다. 다만 클립보드를 넘기는 손이 한 박자 늦었다.

"한."

다니엘의 낮은 목소리가 주방 공기를 가볍게 울렸다.

한결이 고개를 들자, 다니엘은 핀셋으로 완벽하게 플레이팅된 접시를 가리키며 짓궂게 입꼬리를 올렸다.

"이 플레이팅, 내가 가르쳐 준 대로 아주 잘 됐는데?"

"셰프가 가르쳐 준 적 없거든요. 다 내 실력이지."

한결이 가볍게 받아치자, 주방 안의 스태프들 사이로 미세한 웃음소리가 터져 나왔다. 과거라면 엄격하게 기강을 잡았을 다니엘이지만, 지금은 그저 피식 웃으며 한결에게 시선을 고정할 뿐이었다.

마감이 모두 끝나고, 스태프들이 퇴근한 텅 빈 레스토랑.

오픈 키친의 불이 하나둘 꺼지고, 두 사람만 남은 오피스 안은 아늑한 온기로 가득했다.

한결은 책상 위에 가볍게 기대어 서류를 정리하려 했다. 하지만 그 허리를 감싸 안는 체구와 익숙한 우디 향이 먼저 다가왔다.

"오늘 홀 서비스 때 리암이 또 쓸데없는 소리 하던데."

"리암이요? 뭐라고 하던데요?"

"너한테 너무 들이대지 말아야겠다고 하더라고. 내 눈빛이 살벌해서 무섭다나."

다니엘이 한결의 어깨에 턱을 괴며 나지막이 웃었다.

한결은 픽 웃으며 다니엘의 뺨을 손등으로 툭 쳤다.

"질투도 유분수지. 2년이 지났는데 아직도 그러네."

"당연하지. 내 계약서에 유효기간 같은 건 없다고 했잖아."

"그거 쌍방으로 고쳤잖아요."

"고쳤지."

다니엘이 한결의 손을 끌어와 손바닥을 폈다.

굳은살은 2년 전보다 두꺼워져 있었다. 오븐 자국도 하나 늘었다.

"그럼 이번엔 네가 정해."

한결이 잠깐 그를 봤다.

그리고 다니엘의 목을 끌어당겼다.

다니엘은 한결의 허리를 더 단단히 끌어안으며, 그 목덜미에 깊게 입술을 묻었다.

주방이라는 뜨거운 전장에서도, 오피스라는 닫힌 공간에서도, 두 사람의 궤도는 언제나 서로를 향해 정확하게 맞물려 있었다.

The peak of dinner service had passed. The floor at AURA Melbourne was full of quiet classical music and the sound of wine glasses touching.

Inside the open kitchen the view was much like it had been two years before, and clearly not the same.

Hangyeol had the sauce section and the main station firmly in hand. He was no longer the new cook who went stiff or worried about the eyes on him. He was the sous chef of AURA Melbourne, and the one who kept the closest rhythm with head chef Daniel Kang.

The position had opened six months earlier through a group listing.

There were four lines of conditions. No shiraz. No Korean. Nine people applied, and Chloe ran the assessment in Sydney.

And Hangyeol got it.

On the evening the result came out, Daniel was at the restaurant. He did not go to the assessment room.

Tock, tock—

Hangyeol chopped herbs at a steady beat. At the pass Daniel was going through the orders, and his eyes turned that way on their own.

The others in the kitchen were no longer surprised by the air between the two of them. Their neat **partnership** was not a thing to remark on any more. They took it as an obvious **principle**.

From the far side of the kitchen a commis raised a careful hand.

"Chef. This sauce — I think the acidity is jumping a little."

Hangyeol looked up. The boy had come in two months earlier on a working holiday. His English was poor, and in the first week he could not even take an order properly.

"Where is it jumping."

"At the finish. I think it will bite against the tenderloin."

"Can I taste it?"

Hangyeol walked over and picked up a spoon. A few seconds later he nodded.

"You're right. One more piece of butter, and take the monté again."

"Yes, Chef."

"And."

Hangyeol set the spoon down.

"Good catch. Say it like that next time too."

From the pass Daniel observed the whole thing.

He said nothing. Only the hand turning the clipboard was one beat late.

"Han."

Daniel's low voice rang lightly through the kitchen air.

When Hangyeol looked up, Daniel pointed with the tweezers at a plate finished to the last line. One corner of his mouth went up.

"This plating came out very well. Exactly the way I taught you."

"You never taught me that. That's all my own work."

Hangyeol batted it back lightly, and a thin ripple of laughter went through the staff. The Daniel of two years ago would have pulled the line straight again. This one only laughed under his breath and kept his eyes on Hangyeol.

After the close was finished and the staff had gone home, the restaurant stood empty.

The lights in the open kitchen went out one by one. The office, with only the two of them left in it, was full of a soft warmth.

Hangyeol leaned lightly against the desk to sort the papers. But a body came around his waist first, and with it the woody scent he knew.

"Liam was talking nonsense again during service tonight."

"Liam? What did he say?"

"He said he'd better not come on to you too hard. Something about my eyes being frightening."

Daniel rested his chin on Hangyeol's shoulder and laughed low.

Hangyeol snorted and tapped Daniel's cheek with the back of his hand.

"There's a limit to jealousy. Two years, and you're still like this."

"Of course. I told you there is no **expiration** on my contract."

"And we changed that one so it binds both of us. **Mutual**, remember?"

"We did."

Daniel drew Hangyeol's hand over and opened the palm.

The calluses were thicker than they had been two years before. There was one more oven mark.

"Then this time you decide."

Hangyeol looked at him for a moment.

Then he pulled Daniel's neck down.

Daniel held his waist tighter and buried his lips deep at the back of his neck.

In the hot battlefield of the kitchen, and in the closed office too, the two of them stayed on one **orbit**. It always turned them exactly toward each other.
