한 장, 두 장, 다섯 장. 티켓이 끊기지 않고 흘러나왔다. AURA의 저녁은 예열 없이 곧장 최고 온도로 올라갔다.

"Order in! Table four, one eye fillet, medium. Two pasta."

다니엘의 목소리가 주방 전체를 관통했다.

"Yes, Chef!"

일곱 명의 대답이 동시에 튀어나왔다. 한결의 목소리도 그 안에 섞여 있었다.

가스 불이 올라오고, 팬이 달아오르고, 기름이 튀었다. 낮 동안 느슨하게 늘어져 있던 공간이 순식간에 하나의 기계처럼 맞물려 돌아갔다.

한결은 소스 스테이션에 있었다. 정확히는 소스 파트의 세컨드였다. 헤드가 시키는 대로 젓고, 거르고, 데우는 자리.

여덟 달 안에 이 자리에서 한 칸 올라가야 했다.

"Behind! 뜨겁습니다!"

한결이 달군 소스 팬을 들고 몸을 틀었다.

메인 조리대까지 가는 통로는 1미터가 안 됐다. 다니엘이 그 한가운데에 서서 플레이팅을 하고 있었다. 지나가려면 둘 중 하나가 붙어야 했다.

다니엘은 비키지 않았다. 대신 조리대 쪽으로 몸을 반쯤 틀어 틈을 만들었다.

한결이 그 틈으로 들어갔다.

조리복 단추가 어깨깃을 긁고 지나갔다. 오븐의 열기와는 다른 체온이 등 뒤에서 한 박자 늦게 따라붙었다. 팬을 든 손목에 힘이 들어갔다.

한결이 조리대에 팬을 내려놓았다. 손끝이 미세하게 떨렸다. 팬이 무거워서라고 생각하기로 했다.

"Good speed, Han."

다니엘이 지나가면서 짧게 말했다. 목소리를 높이지도 않았고, 돌아보지도 않았다.

스킨십은 없었다. 그런데도 그 세 단어가 어깨를 스친 단추보다 오래 남았다.

밤 10시. 라스트 오더가 끝나고 불이 하나씩 꺼졌다.

스태프들이 조리대를 닦고 바닥을 밀었다. 한결은 내일 쓸 와인 소스를 마지막으로 정리하는 중이었다.

그리고 그는 레시피를 어겼다.

AURA의 레드와인 소스는 규정 레시피가 있었다. 그런데 이번 주에 들어온 시라즈는 산도가 높았다. 규정대로 졸이면 안심의 지방과 붙었을 때 끝 맛이 시큼하게 튀어 오를 게 뻔했다.

한결은 버터를 한 조각 더 넣고 몽떼를 다시 잡았다.

허가받지 않은 조정이었다. 걸리면 그냥 혼나는 정도로 끝나지 않을 수도 있었다.

"뭐 하지."

한결의 손이 멈췄다.

다니엘이 언제부터 뒤에 서 있었는지 알 수 없었다. 그는 대답을 기다리지 않고 스푼을 집어 들었다. 소스를 조금 떠서 입에 넣었다.

음미하는 몇 초.

한결은 도마를 닦던 손을 멈추고 그의 입매를 봤다. 침이 말랐다.

"레시피 바꿨나."

"바꿨습니다."

"허가받았나."

"안 받았습니다."

다니엘이 스푼을 내려놓았다.

"이유."

"이번 주 시라즈 산도가 높습니다. 규정대로 가면 안심이랑 붙었을 때 끝이 튑니다."

한결은 시선을 피하지 않았다. 여기서 눈을 내리면 여덟 달이 짧아진다는 걸 알았다.

다니엘이 그를 한참 내려다봤다. 주방의 팬 소리가 유난히 크게 들렸다.

"산도는 아직 높아."

"……네."

"하지만 안심의 느끼함은 잡히겠군."

다니엘이 손을 뻗어 한결의 머리 위 찬장 문을 닫았다. 긴 팔이 시야를 가로질렀다가 물러났다.

"내일부터 이 소스는 네가 전담해. 대신 조정할 때마다 나한테 먼저 보고해."

"알겠습니다."

"보고 안 하고 또 손대면, 그때는 조항 위반이야."

다니엘이 먼저 주방을 나섰다.

한결은 닦던 도마를 괜히 더 세게 문질렀다. 얼굴에 열이 오르는 게 오븐 때문인지 아닌지 구분이 안 됐다.

"……왜 저렇게 무서운 소리를 하면서 사람을 올려 줘."

한국어였다. 목소리를 거의 내지 않았다.

주방 반대편, 스윙 도어를 밀던 다니엘의 손이 문틀 위에서 반 박자 멈췄다.

한결은 그걸 보지 못했다.

6 p.m. The printer started spitting out paper.

One ticket. Two. Five. They kept coming without a break. AURA's evening jumped straight to full heat, with no warm-up.

Daniel's voice cut through the whole kitchen.

"Yes, Chef!"

Seven voices answered at once. Hangyeol's was one of them.

Gas flames rose, pans heated up, oil popped. The space that had lounged loose all afternoon locked into gear like a single machine.

Hangyeol worked the sauce station. More precisely, he was second in the sauce section. A spot for stirring, straining, and heating whatever the head chef ordered.

In eight months, he had to move up one rung from here.

"Behind! Hot pan!"

Hangyeol turned with a scorching sauce pan in hand.

The passage to the main counter was under a meter wide. Daniel stood right in the middle of it, plating a dish. To get through, one of them had to press against the other.

Daniel did not step aside. Instead, he turned halfway toward the counter and opened a gap.

Hangyeol slipped into the gap.

A coat button scraped across his shoulder. A heat unlike the oven's followed him, half a beat behind. His wrist tightened around the pan.

Hangyeol set the pan down on the counter. His fingertips trembled, just slightly. He decided it was because the pan was heavy.

"Good speed, Han."

Daniel said it briefly as he passed. He didn't raise his voice, and he didn't look back.

There had been no touch. Yet those three words stayed with him longer than the button that had brushed his shoulder.

10 p.m. Last orders were in, and the lights went out one by one.

Staff wiped down counters and mopped the floor. Hangyeol was finishing up tomorrow's wine sauce.

And then he broke the recipe.

AURA's red wine sauce had a set **recipe**. But this week's Shiraz had high **acidity**. If he reduced it by the standard recipe, the finish would turn sharp and sour against the eye fillet's fat.

Hangyeol added one more knob of butter and mounted it again.

It was an unapproved **adjustment**. If he got caught, a scolding might not be the end of it.

"What are you doing?"

Hangyeol's hand stopped.

There was no telling how long Daniel had been standing behind him. He didn't wait for an answer and picked up a spoon. He scooped a little sauce and put it in his mouth.

A few seconds of tasting.

Hangyeol stopped wiping the cutting board and watched Daniel's mouth. His own mouth went dry.

"Changed the recipe?"

"I did."

"Got **approval**?"

"I didn't."

Daniel set the spoon down.

"Why."

"This week's Shiraz has high acidity. Standard reduction turns sharp against the eye fillet."

Hangyeol didn't look away. He knew that if he lowered his eyes here, his eight months would grow shorter.

Daniel looked down at him for a long moment. The kitchen's pan noise seemed unusually loud.

"The acidity's still high."

"...Yes."

"But it'll cut the fillet's richness."

Daniel reached out and shut the cabinet door above Hangyeol's head. His long arm crossed Hangyeol's sight, then pulled back.

"Starting tomorrow, you're in charge of this sauce. But report to me first, every time you adjust it."

"Understood."

"Touch it again without reporting, and that's a clause **violation**."

Daniel left the kitchen first.

Hangyeol scrubbed the cutting board harder than he needed to. He couldn't tell whether the heat in his face was from the oven.

"...Why does he have to sound so scary and still move me up like that?"

It was Korean. He barely made a sound.

Across the kitchen, Daniel's hand on the swing door stopped for half a beat on the frame.

Hangyeol didn't see it.
