3화 스파크와 경계선
오후 2시 30분. 브레이크 타임을 앞둔 주방은 서서히 열기가 가라앉고 있었다.
한결은 저녁 영업에 쓸 미장플라스를 정리하며 도마를 닦아내는 중이었다. 레드와인 소스를 전담한 지 나흘째. 아직은 아무 문제도 없었다.

주방과 홀을 잇는 스윙 도어가 가볍게 열렸다.
금발을 짧게 정리한 사내가 다림질된 홀 셔츠 차림으로 걸어 들어왔다. 홀 매니저 리암이었다. 그는 늘 반쯤 웃고 있었고, 그 웃음이 사람을 편하게 만드는 종류였다.
"찾았다."
리암이 곧장 한결의 작업대 앞까지 걸어왔다.
"홀에서 세 번 불렀는데 대답을 안 하더라. 진짜 안 들린 거야, 아니면 못 들은 척한 거야?"
"안 들렸는데요."
"그럼 앞으로는 이렇게 부를게."
리암이 손을 뻗어 한결의 이마에 붙은 젖은 머리카락을 옆으로 넘겼다. 예고도 없었고 망설임도 없었다.
한결의 손에서 행주가 미끄러졌다.
"머리카락 다 젖었잖아. 이러고 여덟 시간 서 있으면 사람 죽어."
"……홀 준비는 끝났어요?"
"진작 끝냈지. 그리고 끝났으니까 여기 있는 거고."
리암이 스테인리스 선반에 엉덩이를 걸쳤다. 작업대 모서리에 팔꿈치를 얹자 두 사람 사이가 팔 하나 거리로 줄었다.
"요 며칠 그 와인 소스, 손님들이 난리 났어. 홀에서 세 번이나 셰프 불러달라고 하더라."
"그건 헤드 셰프 레시피예요."
"아닌데. 내가 다니엘한테 물어봤는데 네 거라던데."
한결이 고개를 들었다.
리암이 그걸 놓치지 않고 웃었다. 원하는 반응을 정확히 받아 낸 사람의 얼굴이었다.
"한국 사람들은 다 이렇게 일만 해? 좀 쉬엄쉬엄해, 한."
"워홀러잖아요. 일하러 왔으니까 해야죠."
"몇 개월 남았는데."
"일곱 달 조금 넘게요."
"일곱 달."
리암이 그 숫자를 한 번 되뇌었다. 표정이 잠깐 달라졌다가 돌아왔다.
"짧네. 그럼 더 빨리 움직여야겠다."
"뭘요?"
"오늘 마감하고 아래 펍 가자. 탭 맥주 쏠게."
"체력 남으면요."
"체력 남을 거야. 내가 마감 도와줄 거니까."
한결이 어이없다는 듯 고개를 들었다.
"홀 매니저가 주방 마감을 왜 도와요."
"이유 있어야 돼?"
리암이 몸을 앞으로 기울였다. 작업대 위로 그림자가 반쯤 넘어왔다.
"나 여기 6년 있었는데, 여섯 달 있다 갈 애들 얼굴은 두 달만 지나면 잊어버려. 근데 너는 첫 주에 이름을 외웠어."
"……그게 무슨."
"휴대폰 줘 봐."
리암이 손을 내밀었다. 한결이 반사적으로 앞치마 주머니에서 휴대폰을 꺼내다가 멈췄다. 리암은 그 멈칫한 손에서 그냥 폰을 가져갔다.
번호를 찍고, 자기 폰을 울려 확인하고, 돌려줬다.
"저장했어. 'Liam'으로. 마음에 안 들면 바꾸든가."
"이런 걸 왜 물어보지도 않고……"
"물어보면 네가 안 줬을 거니까."
리암이 한쪽 눈을 느리게 감았다가 떴다. 장난이라기엔 시선을 너무 오래 붙들어 두는 윙크였다.
한결이 어이없다는 듯 웃음을 터뜨린 그 순간이었다.
주방 중앙 통제대에서 서류를 넘기던 소리가 뚝 끊겼다.
구두 소리가 좁은 라인을 울렸다. 세 걸음. 그늘이 두 사람 위로 내려앉았다.
"Liam."
낮게 깔린 호주식 영어가 공기를 갈랐다.
"Oh. Chef."
리암이 슬그머니 자세를 고쳐 앉았다.
다니엘은 리암을 보지 않았다. 한결만 내려다보고 있었다. 팔꿈치까지 걷어 올린 소매 아래로 손등의 힘줄이 도드라져 있었다.
"홀 세팅 재검수 끝났나."
"20분 전에 끝냈어."
"그럼 두 번 해."
"두 번 하면 뭐가 달라지는데?"
리암이 웃으면서 말했다. 물러서지 않는 종류의 웃음이었다.
다니엘이 그를 봤다. 처음이었다.
몇 초가 지나갔다. 리암이 먼저 두 손을 들어 보이며 선반에서 내려왔다.
"알았어, Chef. 두 번 할게."
리암이 스윙 도어 쪽으로 걸어가다가, 한결 앞에서 한 번 멈췄다.
그는 목소리를 낮추지 않았다. 다니엘이 뒤에 서 있는 걸 알면서도 그랬다.
"한. 저 사람한테 잘 보이는 건 좋은데."
한결이 고개를 들었다.
리암은 여전히 웃고 있었다. 그런데 눈은 아니었다. 방금 전까지 사람 놀리던 얼굴에서 그 부분만 빠져 있었다.
"특별해지진 마."
"……무슨 뜻이에요?"
"나중에 술 사면서 얘기해 줄게."
문이 닫혔다.
농담으로 넘기기엔 방금 그 눈이 걸렸고, 경고로 받기엔 이유를 알 수 없었다. 한결은 그 문장을 어디에 놓아야 할지 정하지 못한 채로 손에 든 행주만 접었다.
주방에는 다시 둘만 남았다.
다니엘이 한 걸음 다가왔다. 그가 가까이 오면 늘 공기의 밀도가 먼저 바뀌었다.
"주방 내 사적 잡담 금지다."
"잡담 아닙니다. 홀 매니저랑 서비스 얘기……"
"준비 안 끝났으면 손 움직여, 한."
한결이 행주를 내려놓았다.
여기서 물러서면 앞으로 일곱 달 내내 물러서게 될 거라는 감이 왔다. 그는 고개를 들었다.
"계약서 세 번 읽었습니다."
다니엘의 시선이 한결에게 정확히 내려앉았다.
"1번부터 12번까지 전부요. 사적 잡담 금지 조항은 없었습니다."
"……"
"방금 만드신 겁니까?"
주방의 환풍기가 도는 소리가 유난히 크게 들렸다.
다니엘의 표정에는 변화가 없었다. 눈꺼풀 한 번, 그게 전부였다.
"내 주방의 규칙은 내가 만든다."
"그럼 계약서에 없는 규칙도 위반이 됩니까?"
"된다."
"그건 좀 불공평한데요."
"불공평하지."
다니엘이 클립보드를 겨드랑이에 끼웠다. 부정도 변명도 아니었다. 한결이 준비해 둔 다음 문장이 갈 곳을 잃었다.
"저녁 영업 세 시간 남았다. 소스 두 배치 더 잡아."
"……네, 셰프."
다니엘의 등이 통제대 쪽으로 멀어졌다.
한결은 이를 악물고 칼을 다시 잡았다. 이겼는지 졌는지 알 수 없었다. 다만 심장이 아까보다 빨리 뛰고 있었고, 그게 화 때문만은 아니라는 게 제일 마음에 안 들었다.
"미친 인간. 진짜 사람 헷갈리게 하네."
한국어였다.
통제대 앞에서 서류를 넘기던 손이 멈췄다. 다니엘은 고개를 들지 않았다.
그저 왼쪽 입꼬리가, 아주 짧게 한 번 올라갔다가 내려왔다.

2:30 p.m. The kitchen's heat was slowly settling as break time neared.
Hangyeol was organizing mise en place for the evening service and wiping down his board. Four days now, in charge of the red wine sauce. So far, no problems.

The swing door between kitchen and floor opened lightly.
A man with short blond hair walked in, wearing a pressed floor shirt. It was Liam, the floor manager. He always wore a half smile, the kind that put people at ease.
"Found you."
Liam walked straight up to Hangyeol's station.
"I called you three times from the floor. Did you really not hear me, or were you just pretending?"
"I didn't hear you."
"Then I'll call you like this from now on."
Liam reached out and brushed the damp hair off Hangyeol's forehead. No warning, no hesitation.
The rag slipped from Hangyeol's hand.
"Your hair's soaked. Stand like this for eight hours and you'll drop dead."
"...Is the floor set up?"
"Finished ages ago. And since it's done, here I am."
Liam perched on the edge of the stainless shelf. He set his elbow on the counter, and the gap between them shrank to one arm's length.
"That wine sauce these past few days, the tables went crazy for it. Three separate calls out front for the chef."
"That's the head chef's recipe."
"Not according to Daniel. I asked him, and he said it's yours."
Hangyeol looked up.
Liam caught it and smiled. It was the face of someone who had gotten exactly the reaction he wanted.
"Do all Koreans just work like this? Ease up a bit, Han."
"I'm on a working holiday. I came here to work, so I have to."
"How many months do you have left?"
"A bit over seven months."
"Seven months."
Liam repeated the number once. His expression shifted for a moment, then came back.
"Short. Guess I'll have to move faster then."
"Do what?"
"Let's go to the pub downstairs after we close tonight. I'll buy you a beer."
"If I've got the energy."
"You'll have it. I'll help you close up tonight."
Hangyeol looked up in disbelief.
"Why would a floor manager help close the kitchen?"
"Do I need a reason?"
Liam leaned forward. His shadow spilled halfway across the counter.
"I've been here six years. I forget the faces of six-month kids after about two months. But I learned your name in the first week."
"...What does that mean?"
"Give me your phone."
Liam held out his hand. Hangyeol **reflexively** pulled his phone from his apron pocket, then stopped. Liam just took it from his **hesitating** hand.
He typed in a number, rang his own phone to check it, and handed it back.
"Saved it. As 'Liam.' Change it if you don't like it."
"You didn't even ask before you did that..."
"Because if I'd asked, you wouldn't have given it to me."
Liam closed one eye slowly, then opened it. It was a wink that held his gaze too long to be just a joke.
It was the moment Hangyeol burst out laughing in disbelief.
The sound of papers turning at the pass stopped short.
Footsteps echoed down the narrow line. Three steps. A shadow settled over the two of them.
"Liam."
The low Australian English cut through the air.
"Oh. Chef."
Liam straightened up slightly.
Daniel didn't look at Liam. He was looking down at Hangyeol alone. His sleeves were rolled up past the elbow, and the tendons on the backs of his hands stood out.
"Has the floor setup been re-checked?"
"Finished twenty minutes ago."
"Then do it twice."
"What changes if I do it twice?"
Liam said it with a smile. It was the kind of smile that didn't back down.
Daniel looked at him. It was the first time.
A few seconds passed. Liam raised both hands first and stepped down from the shelf.
"Got it, Chef. I'll do it twice."
Liam walked toward the swing door, then stopped once in front of Hangyeol.
He didn't lower his voice. He did it knowing Daniel stood right behind him.
"Han. Trying to impress him is fine."
Hangyeol looked up.
Liam was still smiling. But not with his eyes. That one part was missing from the face that had just been teasing him.
"Don't become special."
"...What do you mean?"
"I'll tell you over drinks sometime."
The door closed.
It was too pointed to laugh off as a joke, and too unexplained to take as a warning. Hangyeol couldn't decide where to file the sentence, so he just folded the rag in his hands.
The kitchen held just the two of them again.
Daniel took a step closer. Whenever he came near, the density of the air always changed first.
"No personal chatter in the kitchen."
"It's not chatter. I was talking service with the floor manager..."
"If you're not ready, get your hands moving, Han."
Hangyeol set down the rag.
He sensed that backing down here meant backing down for the next seven months. He looked up.
"I read the contract three times."
Daniel's gaze landed on him dead on.
"All twelve clauses, start to finish. There's no clause banning personal chatter."
"..."
"Did you just make that up?"
The kitchen's exhaust fan sounded unusually loud.
Daniel's expression didn't change. One blink. That was all.
"I make the rules in my kitchen."
"So a rule that's not in the contract still counts as a violation?"
"It does."
"That's a bit **unfair**."
"It is."
Daniel tucked the clipboard under his arm. It was neither **denial** nor excuse. The next line that Hangyeol had ready lost its place to go.
"Three hours left before dinner service. Get two more batches of sauce going."
"...Yes, Chef."
Daniel's back **receded** toward the pass.
Hangyeol gritted his teeth and picked up the knife again. He couldn't tell whether he'd won or lost. Only that his heart was beating faster than before, and what he hated most was that anger wasn't the only reason.
"That madman. He really messes with my head."
It was Korean.
The hand turning papers at the pass stopped. Daniel didn't look up.
Only the left corner of his mouth lifted once, briefly, then fell.
