오디트 1일차. 낮은 무사히 지나갔다.

주방은 하루 종일 평소의 두 배 속도로 돌았고 아무도 실수하지 않았다. 마감 정리에 들어갈 무렵에는 다들 말수가 줄어 있었다. 긴장이 풀린 게 아니라 아직 이틀이 남아 있기 때문이었다.

한결은 홀 측면 와인 바에서 내일 페어링에 쓸 병들의 상태를 확인하고 있었다.

"한. 보틀 잡을 때 손바닥으로 라벨 가리면 안 돼."

언제 왔는지 리암이 뒤에서 손을 뻗었다. 그의 손이 병목을 잡은 한결의 손 위로 겹쳐졌다.

"이렇게. 손님한테 라벨이 보여야 하니까."

"아…… 그렇군요. 와인은 잘 몰라서."

"주방에만 있으면 모르지."

한결이 고개를 돌렸다. 생각보다 가까이에 리암의 얼굴이 있었다.

리암은 물러서지 않았다. 손도 떼지 않았다.

주방 스윙 도어 너머에서 메탈 트레이가 떨어지는 소리가 났다.

다니엘이 주방 입구에 서 있었다.

팔짱을 낀 자세였다. 걷어 올린 소매 아래로 손등의 힘줄이 서 있었다. 그 손이 언제부터 그러고 있었는지는 알 수 없었다.

"Liam."

목소리 자체는 평소와 같았다. 그런데 홀 전체가 조용해졌다.

"마감 라인 재검수 끝났나."

"아, 다니엘. 한한테 와인 핸들링 좀 알려주던 중이었어."

"홀 매니저가 주방 스태프 오디트 교육까지 맡게 됐나."

다니엘이 걸어 나왔다.

구두 소리가 한 번 울릴 때마다 리암의 표정에서 웃음이 한 겹씩 벗겨졌다. 다니엘은 두 사람 사이를 정확히 가운데로 갈라놓으며 섰다.

"네 구역 정리해. 한결은 따라와."

한결은 병을 랙에 꽂았다. 리암 쪽은 보지 않았다.

리암이 그의 등 뒤에 대고 뭐라고 말하려다 삼키는 기척이 났다.

첫날 서명을 했던 그 워크인이었다.

철문이 닫히고 냉기가 몸에 붙었다. 낮에 흘린 땀이 아직 조리복 안에 남아 있어서, 그게 한꺼번에 식으면서 한결은 어깨를 떨었다.

"오디트 준비 중입니다만."

"잡담하지 말라고 했을 텐데."

"업무였습니다."

"업무."

다니엘이 한 걸음 다가섰다.

이번에는 클립보드가 없었다. 그의 손이 한결의 머리 옆 스테인리스 선반을 짚었다. 등 뒤는 선반, 앞은 그의 어깨. 나갈 각도가 사라졌다.

"내일 페어링 와인 여덟 병 상태 확인하고 있었습니다. 라벨 핸들링은 홀에서 하는 일이라 배운 겁니다."

한결이 또박또박 말했다.

"이 중에 뭐가 잡담입니까."

다니엘이 대답하지 않았다.

"셰프."

"네가 웃었잖아."

한결의 말문이 막혔다.

준비해 둔 건 규정 위반 지적에 대한 반박이었다. 이건 그 목록에 없었다.

"……그게 규정이랑 무슨 상관입니까."

"상관있어."

다니엘이 고개를 숙였다. 두 사람의 거리가 한 뼘으로 줄었다. 영하 4도의 공기 속에서 그의 숨결만 뜨거웠다.

"내 주방에서 스태프가 누구한테 어떤 얼굴을 하는지."

말이 한 번 끊겼다. 다음 단어를 고르는 데 시간이 필요한 사람처럼.

"그것도 내가 관리하는 항목이다."

"……얼굴을요."

"그래."

"그것도 계약서에 없던데요."

"그럼 열세 번째로 넣지."

다니엘이 선반을 짚은 손에 힘을 줬다. 스테인리스가 짧게 울었다.

"확인 끝났으면 나가. 내일 8시까지 온도 기록표 채워 놔."

그는 물러서지 않았고, 한결이 나갈 각도를 만들어 주지도 않았다.

Audit day one. The day passed without **incident**.

The kitchen ran at twice its usual pace all day, and no one made a single mistake. By the time closing cleanup began, everyone had gone quiet. Not because the tension had eased, but because two days still remained.

At the wine bar on the side of the floor, Hangyeol was checking the bottles for tomorrow's pairing.

"Han. Don't cover the label with your palm when you hold the bottle."

Liam had come up behind him without a sound and reached out. His hand landed over Hangyeol's, which was already gripping the bottle's neck.

"Like this. The label has to face the guest."

"Oh... I see. I don't know much about wine."

"Not if you never leave the kitchen."

Hangyeol turned his head. Liam's face was closer than he'd expected.

Liam didn't step back. He didn't take his hand off, either.

Clang—

From beyond the kitchen's swing door came the **clatter** of a metal tray hitting the floor.

Daniel was standing at the kitchen entrance.

His arms were crossed. Beneath his rolled-up sleeves, the **tendons** stood out on the backs of his hands. There was no telling how long his hands had been like that.

"Liam."

The voice itself sounded no different than usual. And yet the whole floor went quiet.

"Is the closing line recheck finished?"

"Oh, Daniel. I was just showing Han some wine handling."

"Since when does the floor manager handle audit training for kitchen staff, too?"

Daniel walked forward.

With every click of his shoes, another layer peeled off the smile on Liam's face. Daniel came to a stop exactly down the middle, splitting the space between them.

"Clean up your own section. Hangyeol, come with me."

Hangyeol slid the bottle back into the rack. He didn't look toward Liam.

He could sense Liam start to say something behind him, then swallow it.

Thud—

It was the same walk-in where he had signed on the first day.

The steel door shut, and the cold latched onto his body. The sweat from his shift still clung inside his chef's coat, and as it cooled all at once, Hangyeol's shoulders shook.

"I was in the middle of audit prep."

"I told you not to chat."

"It was work."

"Work."

Daniel took a step closer.

This time there was no clipboard. His hand landed on the stainless shelf beside Hangyeol's head. Behind him was the shelf; in front of him, Daniel's shoulder. Every angle of escape was gone.

"I was checking the condition of eight bottles for tomorrow's pairing. Label handling is a floor job, so I learned it."

Hangyeol said it evenly, word by word.

"Which part of that was chatting?"

Daniel didn't answer.

"Chef."

"You smiled."

Hangyeol's words caught in his throat.

What he'd prepared was a **rebuttal** to a charge of breaking policy. This wasn't on that list.

"...What does that have to do with policy?"

"It has everything to do with it."

Daniel lowered his head. The distance between them shrank to a hand's width. In the minus-four-degree air, only his breath was warm.

"What face my staff wears, and for whom, in my kitchen."

The sentence broke off once. Like someone who needed a moment to choose the next word.

"That's a category I manage, too."

"...A face."

"That's right."

"That wasn't in the contract, either."

"Then I'll add it as Clause 13."

Daniel pressed his braced hand harder against the shelf. The steel gave a short **groan**.

"If you're done checking, get out. Have the temperature log filled in by eight tomorrow."

He didn't step back, and he didn't leave Hangyeol any angle to escape.
